Sunday’s are for baking. My weeks get pretty busy with my job and making sure the apartment is somewhat in order (aka not falling apart) so weekends are my days to get everything else done. Saturday’s are usually a rush of cleaning, meeting up with friends, and getting shopping done. Sunday’s are our relaxed days where we will do our own projects and mine usually has something to do with cooking.

These ooey-gooey Choc Chip Cookie Protein bars are perfectly sweet and hit that sweet tooth while still being healthy. I like to make a batch and keep it in my freezer to grab in the day, whether as a pre- or post-workout boost.

We bought a huge 5kg bag of Chocolate Cookie flavoured protein from Bulk Powders so this was perfect for what I wanted to make here. You can use any type of protein powder but I would recommend a cookie flavoured one as it really gives this bar such a real cookie dough flavour. If you don’t have cookie flavour, don’t despair, you could also use vanilla or chocolate which will work just as well.

The best part is that these are so super easy to make! All that needs to be done is all of the ingredients get mixed together in a bowl, the dough gets pressed into a tin and then stuck into the freezer to set. Easy right?

These cookie dough bars can get rather sticky and don’t hold well if left out to get to room temperature so it is recommended to either keep these bars in the fridge or freezer.

No-Bake Choc Chip Cookie Dough Protein Bars

Be sure to keep your freezer stocked with these gooey cookie dough bars

Ingredients:

  • 1/4 cup almond butter
  • 1 teaspoon vanilla extract
  • a pinch of salt
  • 1 scoop (20g) chocolate cookies flavoured protein powder (chocolate or vanilla would also work well)
  • 1 teaspoon melted coconut oil
  • 1/3 cup desiccated coconut
  • 1/2 cup all-purpose gluten-free flour
  • 100g chocolate chips

Method:

  1. In a bowl, add all of the ingredients and mix until well combined. The dough will be thick and sticky.
  2. Line a 20x20cm tin with baking paper and press the dough into the tin.
  3. Cover the tin with cling wrap and stick it into the freezer to set for 10 minutes.
  4. Take out to cut into bars and then make sure to keep them in either the fridge or freezer as they get too sticky at room temperature.
